Here are some of our favorites, some award winners, some house kits and our monthly brewers contest winners.  All ingredients for these recipes can be bought at the shop unless otherwise noted (like honey and certain spices). Many recipes can even be improved with the addition of a liquid yeast from White Labs, and can be tracked using ProMash.

Brewing Method: All Grain
Yeast: Whitbread Dry Ale Yeast
Yeast Starter: 1 US Quart
Batch Size: 5 US Gallons
Original Gravity: 1.060
Final Gravity: 1.004
Alcohol Content: 7.2 %
Total Grains: 10 US pounds dry grains plus 2 pounds clover honey
Color: 8.6
Extract Efficiency: 80 %
Hop IBU's: 12.4
Boiling Time: 90 minutes
Primary Fermentation: 7 days @ 62f
Secondary Fermentation: 10 days @ 58f
Additional Fermentation: 30 days cold lagering in brite tank @ 35f

Grain Bill:

5 pounds of Briess 6 Row
4 pounds of Wheat Malt
2 pounds of Clover honey
1/2 pound of Crystal 60L
1/2 pound of Dextrin Malt

Hop Bill:

1 ounce of US Hallertau (4.7%) for 40 minutes in the boil
1 ounce of US Tettnanger (3.8%) for 20 minutes in the boil
1 ounce of US Hallertau (4.7%) for 10 minutes in the boil

Mash Schedule:

Step Mash:
30 minutes @ 122f
15 minutes @ 134f
90 minutes @ 154f
10 minutes @ 164f

 

Brewers Notes:

Add 1 teaspoon of Irish Moss in the Boil 10 minutes before chilling...

Hall Of Foam Current - Eric and Jay's White (A twist on the Zoe)

NGREDIENTS

3 lbs Wheat DME

3 lbs Extra Light DME

4 oz. Flaked Oats

8 oz. Light Wheat

1.5 oz Coriander

3/4 oz. Sweet Orange Peel

2 oz ground ginger

½ oz Saaz for 60 minutes

½ oz. Saaz for 30 minutes

Hefeweizen Yeast 

PROCEDURE

Steep grains in 2 gallons for 20 minutes at 150. Remove grains, bring to boil and add malt. Add ½ oz. hops. Boil 30 minutes, add remaining hops, ½ the orange peel, and ½ the coriander. Boil 30 more minutes, remove heat, and add all remaining spices. Chill and pitch yeast. Ferment to completion. Recommended to prime with 1-1/4 cup DME.

Charity Kits 

DOCTOR METAL – Dark Lager (BJCP Cat. 4C) 

Doctor Metal hosted the Metal Zone on 94 HJY. I used to listen to his show while a kid and racing BMX. In a tragic accident, Mike “Doc” Gonzalez died in one of the most tragic fires to ever hit Rhode Island, or any nightclub in this country to date. Heavy Metal in the eighties coincided with the color black. Therefore this black lager has been created in the molds of other world class dark lagers. Clean and crisp for a darker beer, this beer is mysterious in color and smooth. Hints of chocolate without any bitterness are layered throughout like a Metal band guitar solo. The hops are aggressive, but only enough to balance the overall experience. Enjoy cold with a burger fresh of the grill. Proceeds from the sale of this beer kit benefit the Doc Fund or some relation thereof, such as the Station Family Fund or the Michael J Gonsalves Scholarship Fund.  

INGREDIENTS

Dark Crystal – 8 oz.

Munich – 4 oz.

Dehusked Carafa I – 2 oz.

Chocolate – 1 oz.

Amber liquid malt extract – 3.3 pounds

Light liquid malt extract – 3.3 pounds

Spalt hops – 2 oz.

Herzbrucker hops – ½ oz

Tettnang hops – ½ oz

Corn sugar – 5 oz (for priming)

Lager Yeast 

PROCEDURE

Steep grains in the muslin bag in a pot of water for 20 minutes.  Remove grains and rinse/sparge. Bring pot to boil and add both cans of liquid malt extract and enough water to get to 2-1/2 gallons. Start boil and add 2 oz. of Spalt hops. Boil 45 minutes and add half the package of each the Tettnang and Herzbrucker hops. Add 1 tsp. of Irish Moss (optional, not in kit) and boil additional 15 minutes. Ferment 14 days at 42-52 degrees and finish fermentation at 57-62 degrees. Bottle with the 5-oz. package of priming sugar. Store 2 weeks. Enjoy!

ZOE WIT - Belgian Style White Ale (BJCP Cat. 16A)

Zoe is the daughter of Steve Dowgiala, a great brewing friend and former shop owner who tragically passed away in 2006. We do what we can to send his beautiful and bright young daughter to school in the future. Proceeds from the sale of this kit will benefit the Zoe Dowgiala College Bound Fund.

INGREDIENTS

3 lbs Wheat DME

3 lbs Extra Light DME

4 oz. Flaked Oats

8 oz. Light Wheat

1 oz Coriander

1 oz. Sweet Orange Peel

½ oz Saaz for 60 minutes

½ oz. Saaz for 30 minutes

Belgian Yeast 

PROCEDURE

Steep grains in 2 gallons for 20 minutes at 150. Remove grains, bring to boil and add malt. Add ½ oz. hops. Boil 30 minutes, add remaining hops, ½ oz orange peel, and ½ coriander. Boil 30 more minutes, remove heat, and add remaining spices. Chill and pitch yeast. Ferment to completion. Recommended to prime with 1-1/4 cup DME.
